Chapter Two: Lipids

Lipids are fats oils and waxes. They are organic compounds that are not soluble in water. Structurally they fall into two catagories. The di and tri-glycerrides are made from a condensation reaction between glycerol and fatty acids. Steriods have a characteristic ring structure.
